Around this time of year a repertoire of small and simple dishes is a useful thing to have. A selection of open sandwiches is perfect with drinks ; a variety of toppings allows everyone to choose what they want and eat as much as they need. Perhaps best of all, they are quick and easy to make.A favourite in our house is simply canned fish on bread. The trick is the type of canned fish and the type of bread.
On Christmas Eve we chose Sardines entières au piment d'Espelette which we lightly squashed onto lightly toasted baguette slices. Perfect with the bubbly!

I love this simple yet tasty snack. It would go well with a cold still Chardonnay - preferably an un-oaked. Whatdaya think?
